"Growing up in France, you don't see anybody in your family who's an entrepreneur. You have to watch TV, American movies to see successful Black men. I came to the US and I met so many people who are successful whom own their business or are actors, and just talking to them and see the passion that they have for doing what they're doing and the passion of giving back, really did inspire me." Lou says he didn't have many Black mentors in the baking world- now, he's changing that for future bakers. "I think mentorship is really important because being Black, in 2021 now, there's always the first at everything....so you're always the first at everything. And in 2021, it's just not right. It should be a normal thing. So for us to do our part and mentor other kids, it's really important because doing what I'm doing, I'm just giving an outlet for other kids to go this route and be a baker. I think there's a lot of Black kids that want to be bakers. It's not always hip hop or basketball." And Lou wants to keep the conversation going around representation. "When I hear other Black professionals talking about their experience, it makes me feel good.
